Veggie Crumble (Fake Beef) taco salad

canola oilonion-dicedgarlic -mincedbell pepper (any color, but bright is better)-choppedMorning Star Farms veggie crumbles frozenJalapeno diedan of fire roasted diced tomatoescumin powderother yummy spicessalt and pepperspinach or any leafy greenany other fresh salad veggies you likesalsaPlain Greek yogurt
Heat oil in skillet over medium heat. Add onion, then garlic and sautee until almost soft, about three minutes. Add bell pepper and jalapeno and pinch of salt and sautee until tender. Add veggies crumbles and tomatoes and juice (juice will begin to evaporate) and cook until thoroughly heated. Add cumin and other desired spices (i like chipotle powder). Cook until taco meat consistency and allow to cool for two minutes. Toast tortillas in oven and slice into strips. Scoop filling onto bed of greens. Add other desired veggies (I like raw onion and tomato. Add sliced avocado, dollop of greek yogurt, salsa and sliced tortilla strips. Season with salt and pepper, and lime juice if desired.
