Diabetic Friendly Berry Pie

4 cups fresh berries1 (6 oz) graham cracker crust1 (4 oz) package JELL-O Vanilla Sugar-Free Cook & Serve Pudding1 (4 oz) package JELL-O Raspberry Sugar-Free Gelatin1 1/2 cups water1 cup Reduced-Calorie or Fat-Free Cool Whip1/2 tsp. vanilla extract (optional)
Arrange berries on pie crust.
In a large saucepan, combine dry pudding mix, dry gelatin mix, and water.
Cook over medium heat until mixture thickens and starts to boil - stir often.
Spoon hot sauce over berries. Mix topping and berries and cover pie evenly.
Refrigerate at least 2 hours.
Serving Size: makes 8 slices
