Apple Crumble Slab Pie

Crust:2 cups flour1 tbsp ground flax seed1/4 tsp salt1 tsp baking powder2/3 cup shortening or butter1/3 cup cold water½ tsp vinegar---Filling:2 tbsp butter7 apples - peeled, cored and cut into thin wedges (I used a mix of 3 Honeycrisp and 4 Jonagold)½ cup sugar½ cup Pyure Bakeable Blend Stevia Sweetener1 tsp cinnamon2 tbsp cornstarch¼ cup cold water---Topping:½ cup flour1 1/3 cups rolled oats½ cup brown sugar½ cup butter¼ cup milk
In a large bowl, combine flour, flaxseed, salt and baking powder.
Cut in shortening until mixture resembles coarse crumbs.
Mix egg, water and vinegar together and mix into flour until it forms a ball. Wrap in plastic and refrigerate at least one hour or up to overnight.
Preheat oven to 350 F.
Roll out the crust to fit the bottom of a 10x15 inch sheet.
In a pot, combine butter, apples, sugar and cinnamon. Place over medium heat and cook until apples begin to soften.
Whisk together cornstarch and cold water, pour into the apple mixture and cook until liquid thickens, about 1 minute.
Pour filling into pie crust.
In a medium bowl, combine flour, oats, brown sugar, butter and milk until crumbly.
Sprinkle over apples.
Bake in the preheated oven for 60 minutes, or until topping is golden brown.
Serving Size: Makes one "cookie sheet" pie, 28 large pieces
