Vegetarian Chili

Ingredients
1 tbsp olive oil1 can black beans (drained)1 can kidney beans (drained)1 green pepper, chopped1 red onion, diced2 cans diced tomatoes (with liquid)favorite chili seasonings to taste (recommend: cayenne, paprika, cumin, garlic, brown sugar)1/4 cup shredded cheese for topping
Directions
Heat olive oil in pot, add diced onions and heat over medium until onions soften. Add chili seasonings and heat for additional minute. Add remaining ingredients. Bring to boil then turn down heat and simmer for 45 minutes. Top with shredded cheese.
