Mexican Lasagna

Ingredients
6 La Tortillia Factory Low-Carb/Low-Fat Tortillias1 Can (16 oz) Fat Free Refried Beans1 Cup Shredded Low Fat Cheddar Cheese1 Can (15 oz) diced tomato (drained )1/2 Cup Chunky Salsa1 Tbs Chili Powder2 tsp Minced Garlic1 Medium Onion Diced1 tsp Hot Pepper Sauce (or to Taste)
Directions
Preheat oven to 350.
Spray 8.4 x 11 inch casserol dish with Non-Stick Cooking Spray.

Mix Refried Beans, 1/2 cup cheese, tomatoes, chili powder, garlic, onion, and hot pepper sauce in a bowl.

Lay 2 tortillas in the bottom of an casserole dish, top with 1/3 bean mixture, salsa, and remaining cheese. Continue 2 more layers.

Bake at 350 for 40 minutes.

    This was relatively easy to make. I made a double recipe because I was concerned that it might be liked so much that there wouldn't be any leftovers. Good thing I did. If I make this again, I think I'll put taco seasoned ground turkey in it. - 5/20/10

    My concern is the sodium. That is half a day's worth in one meal. Sounds really good otherwise. I wonder if something else could be done to reduce the sodium some. - 7/11/08

    I didn't have any hot sauce, so I found the mix a little bland. I added jalapeno, crushed black pepper and salt and some fresh cilantro, all good additions, and some chicken for extra protein. Great recipe! - 6/2/08
