2 Cups Rolled Oats1 Cup of Rice Flour or Coconut Flour1 Cup Shredded Coconut, unsweetened3/4 Cup or 12 tbsp of Semi Sweet Chocolate Chips1/2 Cup Chopped Walnuts1/2 Cup Chopped Pecans2 tsps Cinnamon ground2 tsps Baking Powder1 tsps Salt, optional if using salted butter1 Cup Coconut Milk4 Whole Eggs2 tsps Vanilla extract1 stick or 1/2 cup melted butter1/4 cup brown sugar
Preheat oven to 350 degrees
Mix dry ingredients into large mixing bowl.
In a separate bowl, combine milk, eggs, vanilla, melted butter and brown sugar. Mix well with whisk.
Combine wet ingredients into dry bowl and mix well with spatula.
Pour into 9 x 13 glass baking dish and spread evenly.
Bake at 350 degrees for 35 - 40 minutes. When golden brown and toothpick comes out clean, remove from oven.
Let cool 2 hours before cutting into 24 bars.
Store in refrigerator and wrap some for snacks.
Serving Size: Makes 24 - 2 x 2.5 in squares
