Tofu Key Lime Pie

Ingredients
1 pkg Mori-Nu Silken Lite Firm Tofu1 pkg Instant Vanilla Pudding4 oz. lime juicezest of one lime1 Tbsp honey
Directions
Drain excess water from tofu. Blend tofu with lime juice in a food processor or blender until completely creamy and smooth. Add in instant pudding mix, honey and lime zest. Blend until smooth. Pour mixture into the pie shell and chill for 2-3 hours. To garnish, sprinkle a little lime zest on top of pie and place a thinly sliced lime slice twisted in the center and serve. Your guests won't know it was made with tofu!

    This recipe is a keeper. I made it with lemon juice and cheesecake flavored pudding and it was wonderful. I made it for a diabetic friend and the teenagers in the house devoured it. Next time I need to bring two pies. Nobody could imagine it was made with tofu. - 12/20/08
