Shrimp Orzo

8 oz. orzo4 tbs. olive oil1 cup crumbled low-fat feta1/4 cup parmesan cheese2 tbs. basil1 lb. uncooked medium shrimp, peeled and deveined3 cloves garlic1 can RoTel tomatoes and green chilis1/2 cup dry white wine2 tsp. dried oregano
Preheat oven to 400 degrees; brush 11x7 glass dish with oil or cooking spray. Cook orzo according to package directions. Drain and return to pot. Add 2 tbs. olive oil, and 1/4 cup feta, parmesan, and 2tbs. basil. Stir and arrange in baking dish. Heat 2 tbs. oil in skllet. Add shrimp and saute for 2 minutes; arrange shrimp on top of orzo. In same skillet, add garlic; saute 30 seconds. Add Rotel tomatoes and chilis, stir in wine and oregano. Simmer uncovered until reduced and slightly thicker, stirring. Season with salt and pepper; spoon over shrimp. Bake 10 minutes, sprinkle with remaining feta and serve.
