16 Jumbo Shrimp (25-31ct)1.5 TBSP Cornstarch1 Egg3 TBSP Canola Oil4 Flour Tortillas6 oz of Grape tomatoeshalf a can of black beanswhole small can of sweet corn6 TBSP sour cream1 avocado
1. Shell and de-vein shrimp
2. Lightly beat egg and mix with shrimp and cornstarch. Season with salt, pepper, etc.
3. Heat oil in skillet on medium-high and fry shrimp turning once.
4. Drain and rinse beans and corn. Mix corn, beans, and mexican seasonings. Simmer on medium in saucepan until warm.
5. Warm tortillas in the oven.
6. Spoon bean corn mixture on each tortilla and 4 shrimp on each tortilla. Add grapes tomatoes, avocado, and sour cream to each taco.
Serving Size: Makes 4 tacos (2 Servings)
