Spanish Egg White Scramble

Ingredients
1 tbsp. chopped onion1 tbsp. chopped shallot1 tbsp. minced garlic1 tbsp. minced green chili pepper1/2 c. chopped fresh spinach3 egg whites or 1/2 c. liguid egg whites1/4 tsp dried cilantro or parsley or 1 tsp fresh1/4 tsp crushed red pepper flakessea salt to taste
Directions
In a nonstick pan, heat 1 tsp water and cook onion, shallot, garlic, green chilis until soft. add spinach cook until wilted. Add eggs and scramble all together sprinkle with remaining ingredients as desired.
