Healthy Stuffed Peppers

2 whole yellow bell peppers2 cups cooked brown rice1 Tsp Dried Basil1 Tsp Italian SeasoningSalt & Pepper to Taste1 Tbsp Olive Oil3 Green Onions1 Medium Tomato, chopped15 Large Black Olives, chopped
1. Cut bell peppers in half and bake cut side down on greased cooked sheet at 400 degrees F for 20-30 minutes or until starting to brown
2. Meanwhile, add olive oil, onions, Basil, Italian Seasoning, Salt & Pepper to taste to a pan and sauté for 2-3 minutes
3. Add Chopped Tomato and Chopped Olives and sauté for 5 minutes more
4. Add 2 cups cooked brown rice, stir in until warmed through
5. Remove from heat and add crumbled feta cheese. Heath through.
6. Stuff bell pepper halves with rice mixture and return to oven for 5-7 minutes
7. Serve immediately.
