Puerto Rican inspired dish. Fantastic! Puerto Rican inspired dish. Fantastic!
Number of Servings: 8

-2 lbs boneless skinless chicken thigh (cut the fat off and cut into cubes)
    -.25 c olive oil
-1 packet goya sazon con culantro y achiote seasoning
    -.5 tbsp goya adobo seasoning
    -salt and pepper

I serve with my Puerto Rican arroz mamposteao (beans and rice).

Mix ingredients in a ziplock bag. Marinade chicken for at least a half hour. Put the chicken on skewers and grill until cooked through.

Tip- I make my skewers bigger than 4 oz servings for company, but use a food scale to measure out 4 oz for myself. This recipe makes 5-6 good sized skewers. You can also add onions, peppers, etc.

Serving Size: Makes 8, 4 oz servings
