Olive Oil(2T, 6T)Aubergine(1-2)0.5t Cumin Seeds0.5t Nigella Seeds0.5t Sesame Seeds0.5t Fenugreek SeedsOnions (2)Garlic (2-3)Ginger, Fresh Root (1")Chilli (1)0.5t chilli powder (cayenne)0.5t coriander ground0.5t turmeric0.25 cup tomato paste0.5 cup coconut milk2T fresh coriander
Cook chopped aubergine in oil for 5-10 minutes. Remove from pan, wipe out, add 6T oil then cook seeds until cumin goes golden (2 minutes), lower heat add garlic and onions, chilli and ginger, cook for about 10 minutes. Add spices, salt, tomato paste and cook for a couple of minutes. Return aubergine to pan with a little water to loosen mixture, add coconut milk. Continue to cook about 5 minutes until aubergine is ready. Add coriander leaf and serve.
