Stuffed Pepper Surprise Salad

Sweet peppers (bell), 2 large (2-1/4 per lb, approx 3-3/4" Radishes, 6 medium (3/4" to 1" dia) Mushrooms, fresh, 6 mediumCelery, raw, 2 stalk, medium (7-1/2" - 8" long)Cucumber (with peel), 1 cucumber (8-1/4") *Green Onion (1 Green Onion), 0.5 cup*Field Greens Salad Mix (Salad Greens), 4 cup*1/2 avocado, 1 servingSunflower Seeds, without salt, .25 cup, hulled *Kens Lite Olive Oil Vinaigrette 2 T, 2 serving
Choose crisp, large green peppers.
Dice radishes, mushrooms, celery, cucumber, green onions, and avocado. Toss gently.
But tops off green peppers, scoop out seeds. Fill with diced vegetable mixture.
Place on bed of salad greens' sprinkle with sunflower seeds. Serve with your favorite light vinaigrette dressing
