Chicken Enchiladas with Green Chili Cream Sauce

Ingredients
10 Whole Wheat Tortillas2 Cups of Shredded Cooked Chicken Breasts2 Cups of Shredded Cheddar Cheese3 TBSP of Smart Balance Buttery Spread3 TBPS of Flour1 Small Can of Diced Green Chilies1 Cup of Reduced Fat Sour Cream2 Cups of Chicken Broth
Directions
Preheat oven to 350 degrees. Grease a 9x13 Pan.
Shred cooked chicken and 1 cup of the cheddar cheese. Roll mixture into tortillas and place in the pan.

In a sauce pan, melt smart balance,then stir in flour, cook 1 minute. Add broth and wisk until smooth. Heat over medium heat until thick and bubbly. Stir in sour cream and diced green chilies. Do not boil, you do not want to curdle the sour cream. Pour over enchiladas and top with remaining cheese.

Bake 22 minutes and then under high broil for 3 minutes to brown the cheese.
