Potpie Pennsylvania Dutch Style

1 large chicken2-3 quarts watersalt and peper1 onion , chopped2 stalks cerery, chopped2 carrots, chopped1.5 cups sweet corn1/4 cup parsley2 cup flour1/4 tsp salt1 tbsp shortening1/4 cup water1 large egg, slightly beaten
Cook chicken in water, salt and pepper until tender. Drain broth and remove fat. Remove meat from bones. (I often put the bones back in the broth or new water for even more broth!)
Add vegetables and parsley to the broth and cook until tender. Add chicken.
For potpie dough - combine flour and salt. Cut in shortening. Add 1/4 cup water and egg. Mix to for ball. Cover bowl and let stand 15 minutes. Roll out on floured surface and as thin as possible. Cut into 1 1/2 inch squares, and drop into broth. Cook 5-10 minutes and serve. Serves about 8 people.
