Creamy Mushroom Stroganoff

Ingredients
12 oz soy crumbles1 c chopped onions1 t garlic1 t soy sauce4 c sliced mushrooms2 c low fat sour cream2 T cornstarch1/4 c minced parsley1 lb fettuccine
Directions
Saute onion, garlic and soy sauce in 1/4 c water. simmer until onions are translucent. Add mushrooms, stock and crumbles, saute 15-20 minutes. Stir in sour cream. Simmer again. Mix 1t cornstarch in 1/8 cold water and add to pan. salt and pepper to taste. pour over cooked fettuccine and serve.
