Coconut oil sugar cookies

1 cup softened coconut oil2 cups packed brown sugar2 eggs large4 tbsp vanilla extract2 tbsp molasses3 1/2 c flour4 tsp corn starch2 tsp baking soda1/4 tsp saltColored sugar if desired
Cream softened oil, eggs, and sugar until creamy. Beat in until incorporated the vanilla and molasses. Gently combine the dry ingredients into the wet until just mixed.
Roll 1 tbsp balls and place on a lined or greased cookie sheet. Use a round cup or spoon to shape and flatten. Refrigerate, covered, 2 hours to chill (up to 24 hours). Preheated oven to 350 f. Bake 8-10 minutes directly from Fridge. Allow to cool - cookies will harden as they cool
