Chicken Curry

Ingredients
2 tbsp oil, divided2 med onions, cut in wedges1 yellow pepper, cut in strips1 red pepper, cut in strips1 clove of garlic, choppedcurry powder to tastered pepper flakes to taste3 chicken breasts, cut in chunks1 can lite coconut milk1 can chicken broth1 cup lentils
Directions
1. Saute onion, peppers, and garlic in 1 tbsp oil. Add curry and red pepper flakes to taste. When vegetables are soft remove from pan and add the remaining oil and chicken to pan. Add curry powder and red pepper flakes to taste. Saute until brown. Return vegetables to pan. Add coconut milk and chicken broth. When liquid begins to boil add lentils and cook until done. Makes 8 servings.
