1 lb. whole grain linguine, broken into thirds1 red bell pepper, julienned1 orange bell pepper, julienned6 scallions, white and green, thinly sliced1 cup fresh peas1 cup vegetable broth7 T PB 2 (powdered peanut butter)1/4 cup low sodium soy sauce2 T asian mirin1 T sesame oil3 cloves garlic, minced2 t red pepper flakes1/3 cup chopped peanuts, any style1/2 cup chopped fresh cilantro
Cook linguine as directed on package for al dente. Add peas during last minute of cooking. Drain and rinse with cool water. Set aside. In a small mixing bowl whisk together broth, PB 2, soy sauce, mirin, sesame oil, garlic, and red pepper flakes. Transfer pasta to a large serving bowl. Add peppers, scallions peanuts,cilantro, and dressing. Toss well and chill covered for 2 hours before serving.
