Asian Quinoa Salad

1 cup quinoa 2 cups water1 cup chopped red cabbage1 cup shelled and cooked edamame1 red bell pepper1 cup shredded carrots1 cup diced cucumber For the dressing:1/4 cup gluten free soy sauce1 tablespoon sesame oil1 tablespoon rice wine vinegar2 tablespoons chopped green onions1/4 cup chopped cilantro1 tablespoon sesame seeds1/4 teaspoon grated ginger1/8 teaspoon red pepper flakes
1. Prepare quinoa and edamame as directed on their packages.
2. Place the cooked quinoa in a large bowl. Add the cabbage, edamame, red bell pepper, shredded carrots, and diced cucumber to the quinoa. Set aside.
3. In a small bowl, whisk together the dressing ingredients.
4. Pour the dressing over the quinoa. Mix well.
This salad can be served at room temperature or chilled.
