Minestrone - no pasta

Ingredients
Olive oil 2 tblspoonsDry kidney beans 1 cup2 lbs. chicken thigh no bone no skinSweet potatoe - 1 Leek - 1Onion - 1 largeZucchini - 1 largeCelery - 2-3 stalksCilantro - fresh, bunchSalt, pepper, and other spices6 c water1/2 bottle spagetti sauceSquash - 1 cup
Directions
Hard boil kidney beans for 1 hr.
Stir fry chicken and place in crock pot
Stir fry leek and onion and place in crock pot
Cut other vegetables and pur in crock pot
Cut up celery and cilantro and put in crock pot
Season
Add kidney beans with liquid
Add spaghetti sauce
Fill crock pot with water (about 6 cups)
Cook on low for 6-8 hours (check kidney beans to make sure they're soft)
