Potato Patties

Ingredients
3 Medium Potatoes Peeled and Grated4 Tbsp Canola Oil3 Extra Large Eggs1 Tsp Dried Mint1 Tsp Chili Pepper Flakes4 Tbsp Flour1/2 Tsp Salt1/4 Cup Chopped Green Onion Stalks
Directions
Put Canola Oil in a pan, and heat it up just below medium heat. Add the rest of the ingredients into a small bowl, and mix thoroughly. Form 10 small patties the size of your palm, and flatten them. Carefully place patties in the pan, and cook for 3-5 minutes on each side of the patty or until it reaches a desired golden brown color. Be careful not to splash hot oil on yourself, and careful not to burn the patties. They cook very quickly.

Serving Size: Makes 10 palm size patties.
