NO Bake Chocolate Oatmeal

1/4 c. coconut oil5 T cocoa powder1/3 c. maple syrup1/3 c agave nectar1 t. cinnamon1/2 c. peanut butter1 c. oatmeal1 t. vanilla extract
Place peanut butter and oatmeal in a mixing bowl.
In saucepan over medium high heat, bring coconut oil, cocoa powder, cinnamon, and syrups to a boil. Stir while boiling for 3 minutes.
Remove from heat. Stir in vanilla extract.
Pour hot mixture over peanut butter and oatmeal and stir until well combined. Use small cookie scoop to drop cookies onto parchment paper. Cool/chill for 30 min. before serving. Store in refrigerator in airtight container.
Serving Size: makes approx. 24-30 small cookies.
