Ingredients

1 large sweet potato (1lb)2 medium apples2 T olive oil1/2-1 t cinnamon1/2 t dried basil
Preheat oven to 400 degrees
Cut the sweet potato and apples into 1 inch cubes, possibly peeling the potato if prefered
Toss everything together in large bowl until well coated with olive oil and spices
Spread out in single layer on a baking sheet and place in oven for 30 minutes, or until tender and just starting to shrivel slightly
Serve hot!
Serving Size: Makes 4 large servings for a good side
