Crock Pot Shredded Mexican Style Chicken Breast

Heat oil or Pam in a large skillet. Brown chicken breasts. Remove and drain. Sauté onion, garlic and jalapeno pepper in the same skillet until just tender. Add mild chile peppers, tomatoes, oregano, and cumin, stir to combine. Add all to crock pot and set to 4-6 hours. With 2 forks, shred chicken.
Can top with low fat cheddar, FF sour cream, black olives, salsa... Serve with a tortilla and you're good to go! Just make sure you enter the extras in your calorie counter!!! Great for leftovers for the week too!
