Coleslaw Stirfry

Ingredients
• 4 cups of coleslaw mix• 2 tablespoons olive oil • 1 ounce roasted peanuts • 1/4 teaspoon freshly ground black pepper • 1/4 teaspoon kosher salt
Directions
In a wok or large skillet, heat olive oil over high heat until almost smoking. Add coleslaw stirring constantly and cook for 2 minutes. Add the pepper, salt and cook, stirring, until crisp-tender, about 2 minutes more. Remove from heat and add peanut before serving. Serve immediately.
