4 cups old-fashioned or thick cut rolled oats1/2 cup pecans (halves or pieces)1/4 cup raw cashews1/2 cup sweetened dried cherries1/4 cup dried blueberries1/4 cup chopped dates1 teaspoon cinnamon1/4 cup butter1/4 cup coconut oil1/4 cup raw sugar (demerara or turbinado)2 T. molasses2 T. honey
Combine oats, nuts, and fruits in a large bowl. In a small saucepan, combine butter, coconut oil, sugar, honey, molasses, and cinnamon; heat, stirring, until sugar is partly dissolved (do not overcook). Pour mixture over dry ingredients and stir until oats are completely coated. Whisk the egg white in a small bowl until it starts to become frothy. Pour over mixture and stir until thoroughly combined.
Spread out on a greased 13"x 18" shallow pan. Bake at 275°F for about an hour. Let cool slightly, then remove from pan. Store in an airtight container.
