Cauliflower Mash w/ Veggies

Ingredients
3 c cauliflower, cooked2 Tbsp fat free half & half2 Tbsp light butter1/4 c reduced-fat shredded cheese1/4 c broccoli, cooked1/4 c spinach, cooked1/3 c shelled edamame, cooked2 ears fresh corn, cooked and kernels removed
Directions
Combine cauliflower, half & half, butter, cheese and a little salt and pepper if you wish and either mash by hand or use a stick blender to almost puree mixture. Stir in remaining ingredients and heat additionally if needed.

Serving Size: Makes 2 dinner-sized portions or 4-5 side dishes
