Hint of Vanilla Granola

4 cups rolled oats1/4 cup pumpkin seeds1/4 cup flax seed1/4 cup flax seed meal1/4 cup chopped almonds1/2 cup orange blossom honey1/4 cup coconut oil1 teaspoon vanilla extract1/2 teaspoon ground cinnamon
preheat oven to 325 degrees F.
Mix together oats, pumpkin seeds, flax seed, and flax meal. Mix honey oil, extract and oil together separately, heating very slightly if necessary. Then mix wet and dry mix together, stirring thoroughly. Spread out granola mixture very thinly on a baking sheet lined with parchment paper. If it's not thin enough, granola will not get crunchy. Bake for 30-40 minutes until golden brown. Take out and let cool completely before using. Great with fresh fruit and yogurt!
