Spiced Cucumber Salad

DRESSINGIn a small bowl combine:2 tbsp Splenda¼ cup vinegar…your favorite, I used a Balsalmic 1 tbsp fish sauce or Oyster sauce¾-tsp crushed red pepper flakesSALAD3 cucumbers, halved, seeded, julienned¾ red bell pepper, julienned¾ green bell pepper, julienned½ to 1 onion, thinly sliced
1. Whisk the dressing until the Splenda melts. Pour into a large ziplock bag.
2. Toss the salad ingredients into the bag with the dressing.
3. Zip the bag closed and massage the dressing into the salad. Place the bag in the refrigerator to chill for about two hours. Massage the bag of cucumber salad once or twice.
4. When ready to serve, transfer the salad to a serving bowl.
Serving Size: Makes 6 servings of Asian-type salad
