Simple Spinach Florentine Soup

2 cups low-sodium chicken broth1 can black beans, drained and rinsed1 clove garlic, mincedblack pepper to taste2 cups baby spinach4 tablespoons Parmesan cheese
Makes approx. 4 1-cup servings
Combine beans and broth in a saucepan and bring to a boil. Add garlic and simmer for 5 minutes. Add pepper to taste. Remove from heat and gently stir in baby spinach until wilted.
Top each serving with cheese.
