Easy cool cucumber salad

Ingredients
2 english cucumbers, seeded and cidec4 roma tomatoes, diced1 cup brown rice, dry2 T olive oiljuice of 1 lemon1/4 cup loose packed fresh parsley1/4 cup loose packed fresh mintsalt and pepper to taste
Directions
Cook rice to package directions, set aside

While rice is cooking, dice cucumbers and tomatoes. you may want to put them in a salad spinner to drain some water but it's not required

Now add rice, oil, lemon juice, herbs and spices all to one big bowl and mix well. Adjust any spices or add ins to your liking

refrigerate to cool and let flavors combine for at least 1 hour.
