Quiche Lorraine

3/4 Cup flour1/2 Cup oatmeal, any kind1/3 Cup shortening1/4 tsp salt3-4 Tbs cold water1.5 Cup (6 oz) shredded Swiss cheese8 slices bacon, cooked & drained1/4 Cup sliced green onions4 eggs1.5 Cups low fat or skim milk1/8 tsp nutmeg1/8 tsp pepper
Oat Pastry:
Mix flour, oatmeal, shortening, salt & water and stir until a soft ball is formed. Rollinto a 13-inch circlek fit loosely into 9-inch pie pan. Flute edges. Place into freezer until firm (about 15 minutes).
Filling:
Heat oven to 425*. Sprinkle shredded Swiss cheese over bottom of crust. Crumble bacon over crust. Sprinkle green onion slices on crust. Beat together eggs, milk, nutmeg and pepper. Slowly pour into crust. Bake at 425* for 15 minutes. Reduce heat to 325* and bake 25 to 30 minutes or until center is set. Let stand 10 minutes before serving. Yield 6-8 servings.
