Crockpot Creamy Chicken Salsa

Ingredients
8 oz chicken breast, frozen1 can Rotel, with juice1 can black beans, drained and rinse1 block cream cheese (reduced fat used in calorie count)
Directions
Put frozen chicken at the bottom of a crock pot.
Add the Rotel and black beans.
Set the crock pot on high and leave it for the day.
30 min before eating - put in the cream cheese to melt and mix well.
Take the chicken out of the pot and shred. Place back in and mix.
Serve on top of 1 cup of brown rice (not included in calorie count)

    I use Neufchâtel cheese (less sodium and calories brand) instead of cream cheese. I also substitute with a low sodium version of salsa store brand. Doing this reduces some of the sodium, carbs, and calories. Taste very yummy and is great as leftovers. - 3/18/19
