Summer Frittata

Ingredients
1 tsp olive oil6 extra large eggs, beaten.5 c fresh tomato, diced.5 c zucchini, diced.5 c sweet onion (vidalia), diced2 c fresh spinach2 cloves garlic, minced2 oz soft goat cheese, crumbledsalt and pepper to taste
Directions
1. Set broiler on Hi.
2. Heat oil in a 10-inch oven-proof skillet over medium high heat. Add garlic and onion and cook until they begin to soften. Add zucchini, cooking until soft.
3. Add spinach, allow to wilt, then add salt, pepper and any other desired seasonings. Add tomatoes.
4. Pat down vegetables in bottom of pan. Add beaten eggs. Cook for about 2 minutes.
5. Top eggs with crumbled cheese. Place under broiler for about 5 minutes- until eggs have set and cheese is golden brown on top.
