Zesty Cabbage Soup

Ingredients
1/2 C. White Onions2 Cloves Garlic1/2 Head Cabbage, chopped3 Stalks Celery, chopped1 C. Carrots, chopped1 C. V8 Juice, Low Sodium4 C. Hot Water1 can Cannellini beans, drainedSalt, to tasteBlack Pepper, to tasteMinced Dried Onion, to taste
Directions
Saute white onion and garlic over medium heat in large pot.
Add 2 cups hot water and bring to a boil. Add vegetables slowly, adding more water as needed. Pour V8 juice over top. Stir in seasonings as desired. Bring mixture to a boil and allow veggies to cook through (approximately 20 minutes). Lower heat and simmer mixture for another 20-30 minutes adding water as needed to make more or less broth as desired. I added beans at the end so they wouldn't get too mushy.

Remove from heat and serve. Enjoy!
