Faki (Greek Lentil Soup)

Ingredients
1 1/4 c. dried Lentils (Trader Joe's Small Green Lentils)1 large onion, chopped2 carrots, chopped2 celery stalks, with leaves, chopped2 cloves of garlic, chopped1/3 c. fresh parsley, chopped1/2 of a 15 oz can of Tomato Sauce1 bay leaf6 T. Extra Virgin Olive Oil1 tsp. saltblack pepper to taste
Directions
Sort beans, remove rocks and any bad beans. Put all ingredients (except salt & pepper) in a medium sized pot and cover with water. Bring to a boil, reduce to a simmer, and cook for about an hour. Add hot water as needed, this soup thickens significantly as it cooks. After beans are completely cooked, add salt and pepper to taste and serve.
