Vegan Stuffed Mushrooms

Ingredients
Stuffing Mushrooms (8oz package)Olive oil (2 tbsp)Garlic (1 clove)onion (1/4 cup)Spinach, fresh (1 cup)Tofutti cream cheese (2 oz)
Directions
Remove stems from mushrooms. Dice onion, garlic, and mushroom stems. Add oil to a small frying pan and heat. Dip each mushroom cap in the oil and place in a baking dish. Saute onion, garlic, and stems until brown. Mix with shredded mushroom caps and cream cheese and stuff into the mushroom caps. Bake @350 for 15 minutes until the mushrooms are slightly browned.
