Parmesan Broccoli Fritters

Ingredients
2 cups of cooked broccoli (or cauliflower, or zucchini...)2 eggs1/4 cup of flour1/4 cup of shredded parmesan cheesesalt & pepper to taste2-4 Tbsp olive oil (enough to sauté)
Directions
Heat oil over med-high heat in a large frying pan.

Take the cooked broccoli and chop in to very small pieces. Mix in cheese, S &P, flour and eggs. You may need to add more or less flour. Add enough to be able to form patties. Form 10-15 patties. Place in the heated oil and brown on each side, about 1-2 minutes each side. Blot off excess oil in paper towels, salt immediately.

Serving Size: makes between 10-15 fritters (about 3 in)
