Ingredients:6-8 Medium sized radishes1 bunch fresh scallions (or 1 med. to lg. onion)2 medium cucumbers (‘burpless’ if desired)4 oz. sour cream (*low fat or fat free if desired)8 oz. cottage cheese (*low fat or fat free if desired)Salt and pepper to taste (coarse ground pepper offers a better texture)
Clean and mince radishes and scallions.
Peel cucumber; cut into eighths and then 3/8-inch wedges;
In a large bowl fold vegetables into sour cream and cottage cheese. Add salt and pepper as desired.
Refrigerate and serve chilled.
