Stuffed Green Bell Peppers

Ingredients
Green Peppers (bell peppers), 1 cup, choppedRed Ripe Tomatoes, .5 cup, chopped or sliced*Brown Rice, long grain, .5 cupMushrooms, fresh, 1 cup, wholeCelery, raw, 1 cup, diced Onions, raw, 1 cup, choppedTomato Sauce, 1 cupSalt, 1 dashPepper, black, 1 dashGarlic, 1 tspGround Turkey, 57 gramsEgg, fresh, whole, raw, 1 largeParmesan Cheese, grated, 1 ozCheddar Cheese, .16 cup, shredded
Directions
Cook brown rice. Saute ground turkey. Saute vegetables in olive oil. Remove top of green pepper, saute with vegetables. Add tomato sauce to vegetables. Combine rice and ground turkey, let cool in bowl. Add vegetables to rice and turkey. Add egg, parmesan cheese, salt, and pepper. Stuff mix into pepper. Bake in oven at 350 for 25-30 minutes. Remove from oven, add cheddar cheese, put in oven until melted. Let sit for 5 minutes before serving.
