Shrimp Tacos w/ Corn Salsa

Sweet Corn, Fresh, 1 cup Olive Oil, 1 1tsp Onions, raw, 2 tbsp chopped Lime Juice, 2 lime yields Avocados, California (Haas), 1 fruit without skin and seeds Shrimp, raw, 12 oz Cilantro, raw, 2 tbspSalt 1/4 teaspoonPepper 1/4 teaspoon
Combine corn and oil in small bowl and toss to coat. Arrange in pan and broil 6 minutes until lightly browned. Combine corn, onions, cilantro, 1 tablespoon juice, salt/pepper and avocado. Heat large grill plan and coat with with cooking spray. Combine shrimp, 1 tablespoon lime juice, and two teaspoons honey, tossing to coat. Grill two minutes on each side until done. Serve on warmed corn tortillas. Top with sour cream mixed with 1 tablespoon lime juice if desired.
