2 tbsp. olive oil1 large Vidalia onion3 cloves garlic, minced1 stalk celery, diced1 teaspoon kosher salt1/2 cup tomato sauce1 teaspoon tumeric1 teaspoon basildash cinnamondash cayenne pepper 1 bay leaf4 cups water1 14 oz. can chick peas, drained & rinsed3 cups kale leaves, chopped, stems removed
In soup pot or large saucepan heat oil and saute onion, garlic, and celery until tender. Add sweet potato and salt; saute 3-4 more minutes.
Add seasonings, tomato sauce, water, chickpeas and kale. Bring to a boil. Lower heat and simmer for about 25 minutes or until sweet potatoes are tender. Taste half way through and adjust seasonings if necessary.
