Meredith's peanut stir fry

Ingredients
1 tsp sesame oil1 clove minced garlic1 tbsp minced ginger1/2 cup water1 tbsp soy sauce1 tsp ground coriander1/3 smooth all natural peanut butter1 tbsp mirin1 tsp srirachaWhatever veggies you wantTofu (1 block of medium tofu)Olive oil for stir frying (1 tsp in nutrition info)Agave nectar (1 tbsp in nutrition info)Extra soy sauce (2 tbsp in nutrition info)
Directions
Prepare peanut sauce: Saute the garlic and ginger in the oil. Add the water, soy sauce, and coriander and bring to a boil. Whisk in the peanut butter and mirin. Add the sriracha. Heat until thickened.

Chop all the veggies. Microwave the sweet potatoes until a bit tender, to reduce cooking time. Preheat a wok over medium heat. Saute the onion, celery, bell pepper, ginger, and garlic in the olive oil, for 5 minutes, until onion is translucent. Add tofu, broccoli, carrot, and sweet potato. Stir in the peanut sauce, plus any extra soy sauce you wish and agave nectar to taste. Cook until sweet potatoes can easily be broken with a fork. Serve with rice, if you wish!
