Tomato Tofu Basil Salad

*Tomatoes, red, ripe, raw, year round average, 2 small whole (2-2/5" dia)*Lite FirmTofu, Nasoya, 1/2 of the package*Extra Virgin Olive Oil, 0.5 tbsp*Balsamic Vinegar, 2 tbspBasil, 1 tbsp
1. Slice your tofu and tomatoes 0.2 inches thickness (or however thickness you prefer)
2. Place your tofu and tomatoes (alternating: tofu-tomato-tofu-tomato...)
3. Sprinkle your olive oil first then balsamic vinegar.
4. Sprinkle crushed basil (if you prefer whole leaves you can do that; you can also substitute with mint if you like!)
Serving Size: Makes 1 Lunch for one person
