Choco-Oatmeal No Bake Bars

Ingredients
1 cup peanut butter 1/2 cup honey 1/2 cup coconut oil (sub. butter) 2 cups old fashioned oats 1 cup shredded coconut 1/2 cup chopped nuts, raisins, or dried cranberries 1 1/4 cups dark chocolate chips 1 teaspoon vanilla extract
Directions
Melt peanut butter, honey and coconut oil over low/med heat. Watch it - it will burn!

Remove from heat, stir in all other ingredients. Mix well until chocolate is melted.

Press into lightly greased (with coconut oil!) 9x13 pan and refrigerate for 2-3 hours. Use a smaller pan if you want thicker bars, and chill a bit longer.

Slice into 2" squares and store in fridge or freezer.

Serving Size: Makes 30 2x2" bars in a 9x13 pan.
