Diet Soda Coconut Cupcakes

Ingredients
1 box of moist white cake mix, any brand1/2 tsp. of coconut extract12 ounces of Coconut Wave popFrosting1.25 cups of Fat-Free Cool Whip1/2 cup of sweetened coconut
Directions
Preheat oven to 350, or whatever the back of the cake mix box says. Instead of egg or oil add coconut extract and Coconut Wave pop. Mix well until uniform, I used a whisk for mine. Put in oven according to box, I myself baked for 15-16 mins. Use a toothpick and if it comes back clean then cool. I allow about 25-30 to cool before frosting. Its imperative that you allow the cupcakes to be cool before frosting. To frost divide up 1.25 cups of fat-free cool whip. That will equal out to one table spoon per cupcake. You can use regular coconut or toast that coconut. If you do, take half cup of coconut to a medium heated pan. toast for about 4 mins. This as well needs to be completely cooled before topping.
