Absolutely Zippy Spinach and Mushroom Bites

Ingredients
1 large Egg1 large Egg white1/2 cup Chopped Mushrooms1 10-oz pk (10 oz)Spinach, frozen2 tbsp Onion powder2 tbsp Garlic powder1 tbsp Red Pepper Flakes1/3 cup Weight Watcher Mexican shrd. cheese Canola Oil Cooking Spray
Directions
* Preheat your oven to 375
* Spray 24 mini-muffin tin cups with canola.
* place a very scant pinch of pepper flakes in the bottom of each cup (I mean it! a TINY amount in each.. like 5 or 6 flakes, tiny!)
* Mix your eggs, spinach, and mushrooms with the onion and garlic.
* Distribute the mixture evenly to each cup
* Add a small pinch of cheese to the top of each cup
* Bake 20 minutes
*try not to eat them all in one sitting.. like I just did. (frowny face)
