Burnt Sugar Frosting

1/5 c. ORG Evap Cane Juice Sugar5/8 c Boiling water24 oz ORG Powdered Sugar (plus extra if needed to make stiff)1 cube ORG unsalted butter1/4 t. salt1.5 t. ORG Vanilla
Melt cane sugar in pan until caramelized, runny and dissolved. Add boiling water (be careful that it doesn't spit out of pan.. pour it in carefully), and stir well.. getting any bits of crusty carmel incorporated.
In mixer, mix Powered sugar and butter until well mixed. Add salt and vanilla. Mix well again.
When the caramelized sugar is cooled.. add to the powered sugar mix.. and blend well.. if its not stiff.. add more sifted powered sugar.. (1/2 cup..)

Serving Size: for 36 Cupcakes
